Valle Grana Blue Marbled Piedmont Cow’s Cheese

Product

A high quality product produced at around 1,000 metres in the Grana Valley although it has not been awarded with the denomination of protected origin (DOP) status of the valleys. Great care is taken with the artisan quality of the cheese and using only the milk from the cheese makers’ pasture grazing cattle. A longer ripening period is preferred in order to encourage the development of natural blue marbling.

Organoleptic characteristics
Aspect and texture: very compact and grainy, yellow paste. The ripened versions have bluish-green marbling
Taste: strong and intense with slight traces of stable and penicillin when ripened
Serving suggestions: full bodied, aged, red wines, sweet and liqueur wines. White water melon chutney, blueberry jam. Rye bread and polenta
