This is a day of celebration for cheese that is the maximum enhancement of raw milk, even if it falls &#8211; alas &#8211; to Italy closed, although the stables and breasts are open, the milk clots and Guffanti, in the closed of its cellars, raises it and therefore preserves it for the days to come, when the party, raw milk cheese in the middle of each convivial table, will be for real.
