Goat’s milk cheese produced by cheesemakers in northeastern Piedmont, aged underground for at least 45 days.

A thin, pale rind characterizes its delicate appearance, typical of a good table cheese, simple in shape but with great substance.
It pairs excellently with Piedmontese red wines.
