Gorghié – 300 – 600 gr

This beautiful raw-milk mountain cheese comes directly from Valsassina and has a regular square shape. Its uniform, straw-yellow color, more intense in summer, and a few small holes, make it a wonderful cheese.

Its distinctive feature is the presence of a thin strip of blue cheese in the center, which gives it a bold flavor, typical of blue cheeses, yet also sweet, typical of this toma.

Guffanti offers it after it has been cellared for at least 75 days.
