Pecorino al tartufo striato

La presenza di tartufi in Emilia Romagna (alcuni di qualità davvero eccelsa) da sempre permette l’utilizzo del celebre tubero in abbinamento con i formaggi pecorini.

In this case, the cheesemaker wanted to create a design using truffle (Tuber Aestivum) inside the cheese, obtaining a streaked effect once the cheese is cut.
