We are proud to present a new cheese by Luigi Guffanti: LATOMA.

If you’re looking for the authentic flavor of the Cuneo valleys captured in a versatile cheese, LATOMA is the ideal choice. Produced following the great tradition of Northern Italian table cheeses, this toma is made from Piedmontese cow’s milk and is aged in our caves for at least 45 days.

The secret? An aging process that perfectly balances the drying of the rind with the softness of the paste, giving you a cheese with a tender heart and a delicately lactic flavor.
